WOULD YOU LIKE TO TRY?: ITALIAN CHEESES & WINES

Every been interested in trying classy cheeses and wines from different countries. How about from Italy?

ITALIAN CHEESES

The Italians are definitely passionate about their cheese. They have made it up in the Alpine mountains, where they perfected their methods. It was an isolated affair, but what they brought off the mountain was literally gold made from milk. Caves were used to keep things cold since the idea of refrigeration back then was just a new concept. From Sicily to Tuscany the Italians make some of the best parmigiano and provolone in the world. Their Mozzarella is a household name. And again, these don’t even scratch the surface of the number of cheeses they actually make. They use goat’s milk, sheep’s milk, buffalo milk, and cow in their processes. All their cheeses have great texture and fragrance, and are good for both shredding and cooking.

1. PARMIGIANO
Parmgiano is a hard granular cheese, cooked but not pressed, named after the producing areas near Parma, Reggio Emilia, Modena, and Bologna (all in Emilia-Romagna), and Mantova (in Lombardia).

2. PROVOLONE
PROVOLONE is an Italian cheese that originated in Southern Italy, where it is still produced in various shapes as in 10 to 15 cm long pear, sausage, or cone shapes.

3. MOZZARELLA
MOZZALLERA is a particular type of mozzarella, made from the milk of water buffalo raised in designated areas of Lazio and Campania; some consider it the best for flavour or quality.

ITALIAN WINES

Italian wine is classified by a special system. It divides the wines into four different groups, which are in turn divided into two sections: Vino de Tavola (table wine) and a European Union category which denotes specific regions that the grapes are grown in. Italy has 20 wine regions (all 20 regions of Italy grow their own wine) and uses over 350 different types of grapes in its many wines.

RED WINES

Red wine is the type of wine that most people associate with Italy, and perhaps the most famous is chianti. Chianti is produced from the Sangiovese grape, and it is this grape that also produces many of the other well-known Italian wines. Other well-known red wine producing grapes that are cultivated in Italy include: Nebbiolo, Montepulciano, Negroamoro and Aglianico.

1. NEBBIOLO
NEBBIOLO is a red Italian wine grape variety predominately associated with the Piedmont region where it makes the Denominazione di Origine Controllata e Garantita (DOCG) wines of Barolo, Barbaresco, Gattinara and Ghemme. Nebbiolo is thought to derive its name from the Piedmontese word nebbia which means "fog."

2. AGLIANICO
AGLIANICO is a black grape grown in the Campania and Basilicata regions of Italy. The vine originated in Greece and was brought to Campania by Greek settlers. The name may be a corruption of Vitis hellenica, Latin for "Greek vine".

WHITE WINES

Italian white wine used to be less well known in other countries until the commercialisation of Pinot Grigio. This wine has become something of a monster, replacing Chardonnay in bars and pubs across the UK. Pinot Grigio can be a satisfying and flavourful wine, but has of late been harvested too early, due to commercial demand, leading to a host of lack lustre wines.

1. PINOT GRIGIO
PINOT GRIGIO is a white wine grape variety of the species Vitis vinifera. Thought to be a mutant clone of the Pinot noir grape, it normally has a grayish-blue fruit, accounting for its name ("gris" meaning "grey" in French) but the grape can have a brownish pink to black and even white appearance.

2. CHARDONNAY
CHARDONNAY is a green-skinned grape variety used to make white wine. It is believed to have originated in the Burgundy wine region of eastern France but is now grown wherever wine is produced, from England to New Zealand.
